1. Handi Mutton
With Poila Baisakh right around the corner, preparations for the Bengali New Year’s Day are in full swing! Even though your plans for celebration may be a little different from the other years because of the Coronavirus pandemic, you can still ring it in at home with as much pomp and vigour. We bring you five recipes of dishes that can make an entirely delicious meal for you and your family members on this auspicious day. Give them a look and enjoy cooking!
To make Handi Mutton, pour in some mustard oil into a large iron pot (the handi). Put in some large-sized mutton pieces with curd, chilli powder, turmeric powder, salt, sugar, garlic and ginger paste, lemon juice and coriander and let it marinate for some time. The more it soaks, the more it absorbs the ingredients, and the better it will taste. Then seal the pot with a layer of dough, and place on a low flame for an hour or two till the mutton is cooked all the way through. Remove the dough seal when done, and serve this succulent and lip-smacking dish with rice!
2. Thor Narkoler Makhamakhi
Heat a generous dollop of ghee in a pan and add black cumin seeds, whole garam masala, chopped banana stem (thor) steamed in turmeric and salt, coconut paste, salt, turmeric powder, cashew nuts, sugar to taste and a bit of water and cook till it has reduced. Add coriander paste, cumin paste, ghee, and red chilli paste and stir well. Take off the heat and garnish with grated coconut, chopped cashew nuts, and whole red chilli.
3. Mourolar Chatpati
Heat mustard oil and add fried cumin seeds, fried potatoes, pumpkin, salt, tomato, turmeric powder, grams, and fried mourola fish and stir well. Add Mantra’s mustard seeds soaked in water, tamarind paste, sugar, red and green chillies and a bit of water and mix well. Serve on a dish plated with banana leaf, and garnish with bori, red and green whole chillies and a bit of tamarind paste. Yum!
4. Shorshe Malai Chingri
First soak Mantra masala powder in water with some salt and keep. Heat mustard oil in a pan and add coconut paste, salt and sugar, turmeric paste and mix well till it becomes a gravy. Keep this gravy aside. In a different pan, add mustard oil, black cumin seeds, curry leaves, salt, sliced onions, fried prawns, the gravy, the soaked Mantra masala and fresh cream and stir well until the ingredients are cooked. Take off heat and serve!
5. Narkel Kheerer Chop
Take some flour and add grated coconut, cardamom powder, sugar, rice powder and knead well with some water. Shape the dough into little hollowed out bowls. In some chopped almonds, pistachios and cashew nuts, put in condensed milk and grated khoya kheer and mix well. Stuff this mixture into the bowls and fry them in oil. Take them out and soak them in a dish full of nolen gur. Drizzle with condensed milk and grated khoya kheer, then garnish with crushed almonds and pistachios. Serve this delicious sweet treat as dessert for the perfect ending to a delectable meal!
