Snacking Special: 5 Recipes From Rannaghar Which Will Surely Spice Up Your Evenings

Learn how to prepare snacks like Ghugni-Pauruti and Rasun Chingrir Toast to tackle the munchies that strike between meals.

1. Ghugni-Pauruti

The time between lunch and dinner can often be long enough to make you quite hungry, and nothing is more satisfying than a plate of freshly prepared, hot snacks. Evening snacks fill you with the energy you need to tide you over until the next meal, so we bring you these five dishes from the popular cooking show Rannaghar that will do just that. Enjoy!

To make the ghugni, soak matar dal overnight in water, and then transfer into a pan along with more water, salt and onion. Cover and boil till the peas are cooked thoroughly but are not mushy. Drain the water and keep aside. Next, in a pan, add mustard oil, onion, ginger-garlic paste, chopped tomatoes and potatoes, along with whole garam masala, chillies, coriander, turmeric powder, cumin powder and red chilli powder. Fry till fragrant, then add the boiled yellow peas. Cook on the flame, then add more water. Cook till the liquid has reduced, and add salt and sugar to taste. Toast some bread – buns or sliced bread work well. Enjoy the ghugni and mop it up with the bread.

2. Rasun Chingrir Toast

For this garlic prawn toast, heat refined oil and butter in a pan, add garlic paste and boiled mashed potatoes and stir well. Add prawns, salt, sugar, pepper, tomato sauce and fried garlic. Mash well. Toast pav with butter, put the garlic prawn mixture on it and sprinkle with pepper. Garnish with tomatoes and lettuce.

3. Peyaj Chhara Peyaji

Who doesn’t love peyaji, those delectable onion fritters full of salty goodness, with contrasting textures of soft and crunchy? What if we tell you that you can make the same but without the onion? In a mixing bowl, add thinly-shredded cabbage, potato, radish, salt to taste, cumin seeds, chopped ginger, chopped red and green chillies, ginger paste, chopped coriander, besan, rice powder, and baking soda, and mix thoroughly. Then, deep fry bits of the batter in hot refined oil in little batches. Take them out and place on a dish. Enjoy while still hot!

4. Murgir Toast

To make this delicious Murgir Toast, marinate boneless chicken with salt, garlic, onion, and chillies. In a different bowl, mix some flour seasoned with salt and coat the marinated chicken. Fry the marinated chicken in some oil and butter. Add onion slices, chopped garlic and chillies and fry some more, then keep aside. Spread garlic paste on a few sandwich bread slices, and fry in oil and butter. Stuff the chicken in between two slices of bread and garnish with lettuce and ketchup. Your Murgir Toast is now ready!

5. Fried Chicken Pasta

Marinate some boneless chicken fillets with salt, lemon juice, chopped garlic, and ginger paste. In a frying pan, add milk, grated cheese, pepper, a pinch of sugar, crushed parsley, and boil. Turn off the flame and keep aside. Fry the marinated chicken lightly in some oil. In another pan, add chopped garlic, salt, sugar, onions, and pasta coated in olive oil, and stir well. Add the fried chicken and the pasta sauce you made with milk and cheese and mix together. Serve on a plate and relish!
