1. Handi Chingri Pulao
All Bengalis will vouch for their undying love for rice or bhaat, invariably! It is what most of our main courses consist of, and we go back to it whenever we are craving some deliciously dependable comfort food. A versatile ingredient indeed, rice can take on many forms even though its regular plain white and boiled form works just as well with almost any side dish one can think of. Today we bring you four unique dishes with this humble ingredient, that will put you in awe. Check them out below!
To make Handi Chingri Pulao, heat some oil in a pan and add bay leaves, cardamom, sliced onion, ginger-garlic paste, green chilli paste, salt, chopped tomato, spice mix powder and fry well. Add coconut milk and water and cook till reduced. Add fried shrimps and cook. Add pan-fried Basmati rice to the gravy and simmer till the rice is cooked. Add ghee, salt, and sugar to taste. Serve on a platter!
2. Chaaler Papad
To make this easy rice papad, add cumin seed, salt, water and sesame to some rice flour and mix till the batter is fully blended. Let it rest for a few minutes. Heat up a frying pan with oil. Pour a bit of the batter in, till you have a deep-fried, crisp round of papad. Repeat this process with the rest of the rice flour batter. You can even store some of the batter to firm up and fry later if you so wish. Make sure to serve piping hot! This is great as a standalone snack or an accompaniment to your meals.
3. Pancharatna Khichuri
This recipe uses five different kinds of lentils along with rice, and hence the name ‘Pancharatna’ Khichuri. To make this, heat some oil and add mustard and cumin seeds. Wait till they splutter, then put in sliced onions and fry till they turn brown. Add turmeric powder, tamarind paste, hing, chilli powder, split green chilli, and salt. Add in soaked Basmati rice, masoor dal, chana, moong dal, toor dal and split pea dal and cook together until ready. Take off heat and garnish with coriander leaves. Get ready to relish with glee!
4. Bombay Biryani
To make this delicious Bombay Biryani, heat five big tablespoons of ghee in a pan and add garam masala. Then add finely chopped garlic, ginger and split green chillies. Fry till golden and add sliced onions next. Throw in some crushed mint leaves into the mix as well as biryani masala and whipped plain yoghurt. Cook for a few minutes till the gravy starts separating, then add mutton pieces that have been marinated in garlic, ginger, salt, pepper, lime juice, plain yogurt, tomato sauce and biryani masala. Cook the mutton all the way through, then add boiled Basmati rice, a few drops of rose water and stir all the ingredients in the pot thoroughly. Take off the flame, garnish with fried onions and cashew nuts and serve! This is a lip-smacking treat that your family will be sure to love and savour with delight.
